With close to 20 ducks and chickens here on my land, frittatas are a great way to deliver the nutriton of the eggs and incorporate some of the fresh Maine bounty. After blanching some fiddleheads (1.5 cups), I will add them to a baking dish containing 6 eggs (mix of chicken and duck) that have been whipped with some cultured cream (1/4 cup). I season them up with sea salt and black pepper then add in chopped spinach (big handful), chives (2 Tbsp), and some chopped asparagus (4-5 spears). Add some cheese if you like, then toss into a preheated 350F oven for 12-15 minutes or until set.
