I have scored several neighborhood peach foraging gigs... now I'm working my way through the bounty! I'm planning on lots of peach preserves but what else do you like to do to keep your peaches through the winter? Dehydrate? Peach leather?

Always end up with way more peaches and pears than i know what else to do with, the bulk of my crop ends up crushed, pressed and fermented into a fruit wine.

lisa if you can get your hands on "nourishing traditions" by sally fallon, i highly recommend her fermeted fruit chutney recipe. i made it with peaches last year and it was unbelievable!! so sad i did not locate any this year to repeat. i did not make enough of it to see how long it would keep, i think she says it will keep up to 2 months in fridge, if you have a root cellar i bet that would work well too.
